Ingredients
- 1 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shortening *
- 1 1/4 cup sugar
- 2 eggs
- 2 tablespoon grated lemon rind
- 1/2 cup milk
- lemon juice from a whole lemon
*我採用帆的改良配方,將無水奶油換成無鹽奶油,並換算為110g
Method
Combine flour, baking powder and salt. Cream shortening. Beat in 1 cup of sugar gradually. Add eggs 1 at a time, mixing well between each egg. Add dry ingredients alternately with milk. Be sure to mix well. Pour mixture into a greased loaf pan. Bake in a 350 F oven for 50-60 min. Remove loaf and let cool. In a small bowl, mix lemon juice and 1/4 cup of sugar. After loaf is cooled for 10 min. pour lemon glaze over loaf and spread. Remove from pan.
